From the outset, the task entrusted to the Act Architecture Design studio
was ambitious: to create an original environment combining a micro-distillery,
brewery and restaurant into a single welcoming experience. With approximately
100 seats, the Projet Pilote truly represents something new for Quebec. Located
in Montreal’s vibrant Plateau-du-Mont-Royal urban neighbourhood, the site lacks
the usual features of post-industrial spaces that accommodate such a large
establishment. To make room for the restaurant and bar part, the technical
equipment was placed on a suspended platform attached to the steel structure. A
new, totally independent structure was then devised to support the weight of
the tanks and the 20,000 litres they can hold. Finally, let’s talk about the
vegetable garden on the roof. This crucial addition is twofold: not only does
it celebrate the produce grown on the premises, it also allows the restaurant
to save space on stock storage.
